This was my first experience making cheese from scratch, and it went amazingly. With a thermometer, this is a breeze, and the result is really good. The ricotta is much creamier and sweeter than the ones you get at the store. Thus, you can add salt and use it for savory purposes or just leave it as is for a sweet application. I'd mainly recommend only if you have a thermometer, but if you do, it's a must.
Ricotta is probably the best cheese to begin making from scratch. It's extremely satisfying to be able to taste this high-quality product that came entirely from myself. My pride was also increased because we happened to have a store-bought ricotta in the fridge at the same time, and I have to say it was no contest. The homemade one is infinitely better.
