I love Stephen's show, and I think he has great content, so I wish I chose a different recipe of his to try for the first time. I don't think this was a bad recipe by any means, but stuffing is an inherently drab dish in my opinion. My version is technically a dressing and not a stuffing, because it didn't actually get stuffed into a chicken or a turkey.
On my behalf, I definitely messed up a bit by adding too much stock to the stuffing, but I think I remedied it a bit by letting it chill in the fridge uncovered overnight to dry out.
My main problem with the stuffing was that it was too bland. I suppose that I could've added more to it on my own, but I wanted to try out the original version first and see what it was like. What made it worse was how much I had leftover; the recipe calls for an entire loaf of bread. Had it been delicious, I would love to have more dressing than I know what do with, but having a few days' worth of leftovers of something I don't particularly like isn't ideal.
Personally, I think there are plenty of much better Thanksgiving sides than stuffing/dressing, like mac n' cheese, dinner rolls, green bean casserole, mashed potatoes, or yams, so I'd go with one of those instead. If you do go with this recipe, be very cautious about how much liquid you put in your stuffing, so add it a little bit at a time.
