I've been watching Jamie Oliver cook online for so long, but I never got around to making a dish of his until now. This dish is fairly easy to put together, it's just a bit time consuming, as all stews are. That being said, the active time is pretty limited, and you can definitely just leave the stew for a few hours and come back.

I made a few changes to the recipe, but it still came out really well. I diced up some onion instead of slicing shallots, subbed the beef stock for chicken stock, and left out the thyme altogether. The most important change I made was definitely using veal instead of beef, but it worked. I'm not sure if I would've known it wasn't beef when eating it, so it probably didn't affect much besides allowing the stew to be done faster by virtue of veal being more tender. Instead of mashed potatoes like Jamie suggests, I served the stew alongside some sourdough toast, and it was good enough to be a stand-alone dish.

I think this is a great cold-weather meal, and it's got a lot of pantry ingredients, so it's possible the meat and vegetables are all you'd need to buy, if that. If you've got time in an afternoon, I highly recommend prepping the stew, and enjoying a great warming dinner that night.
