Paratha is something I've had many times throughout my life, but never even considered myself. Making it is a bit of a process, but nothing is overly complicated, it just seems like practice is needed to make a proper paratha. I definitely skimped a bit on the ghee (which still means I put a lot), so my final product was a bit less crispy and flaky as I had hoped, but it was still pretty passable, I think. A huge advantage to this type of Indian bread over its cousins (aside from its amazing texture on account of the ghee) is that it's much easier to achieve a round shape with this dough than, say, a roti. The dough's already curled into a coil, so it take fairly little to get a nice circular shape. If you're getting into South Asian breads, this is a nice place to start.
