Chinese Cooking Demystified is definitely one of the best youtube food channels on the internet right now, and their knowledge of Chinese culture coupled with their understanding of cooking in home kitchens in both the East and the West are pretty much unmatched. This particular recipe for smashed cucumber salad is from the Dai ethnic group of China's Yunnan province, one of the 55 ethnic minority groups that make up roughly 5% of China's population. This is one of their "Western Supermarket Club" recipes, where the ingredients should all be reasonably easy to find in Western grocery stores. That being said, the core ingredients of cucumber, lime, cilantro, chili sauce, tomato, garlic and ginger should be available pretty much anywhere in the world. As for the recipe itself, it was mainly a breeze, but my mortar and pestle was a bit too small to fit everything that needed to be pounded, so I'd recommend using a big bowl, maybe a wooden salad bowl like I did. All in all, this is a great recipe in terms of simplicity, and it's very healthy. If I have 20 minutes or so to spare, I definitely look forward to making this again.
