Originally, this video was just an excuse for me to use up one of the 4 cans of Chipotle Peppers in Adobo Sauce that I had at home, but it was pretty quick and simple. Edits I made: left out the cheese due to forgetfulness, sous vided the fish instead of pan frying, used corn tortillas replaced the sour cream with greek yogurt, and added some sautéed onions to the mix. All in all, the recipe wasn't particularly delicious, but it was fairly quick and simple, as well as healthy. Thus, I'd definitely recommend making it if you've got the ingredients already, preferably on a weeknight.
As for my deviations from the recipe, they worked for the most part. I'd definitely recommend adding some onions, they add a nice sweetness and crunch to the taco. Definitely add cheese though, since everything can benefit from a little cheese. I wished I'd seared the fish instead of sous videing it, since it lacked a crust or any browned flavor. When it comes to sour cream vs. Greek yogurt, there's not too much of a difference, but the sour cream probably would've tasted a bit nicer.
This is a solid recipe for a quick healthy meal, but don't expect out of this world flavor.
